dandelion wine

Does anyone have a good recipe? The yellow is popping up everywhere, we have had some greens, I pulled and am drying some root for "coffee" and now think I'll try some wine. I am hoping it will totally change my outlook on the weed :)

Dandelion Wine (one of our favorites): 1 gal flower heads, 1 orange, 2 lemons, 1/2 lb raisins, 2 1/4 lbs sugar, wine yeast. Collect flowers and discard all green parts. Pare the fruit, discarding the pith. Chop the rinds and express the juice. Chop the raisins. In a fermenting bucket, pour 1 gallon boiling water over the petals, rind and raisins. Allow to cool, then add the yeast and fruit juice. Loosely cover and leave to ferment for 5 days, stirring twice daily. Strain the mixture, pressing to extract all the juice and discard the pulp. Stir the sugar into the liquid and ferment in a jar with an airlock at about 70 degrees. Rack as necessary when it clears and store in bulk about 6 months before bottling.

I use basically the same recipe as Davids above with the exception of 1/2 gal white grape juice and 1 tsp white tannin instead of the raisins to give it a lighter color.

Then sit back with glass in hand and enjoy that pleasant little book by the same name(Dandelion Wine) by Ray Bradbury!!!...Kirk
