What's your favorite econimical recipes? I found several in an old issue of Country Living, too many to post, if you're interested in them,e-mail me for more info.

This is one of our favorites for leftovers:

Creamed eggs and/or peas on toast:Make a white sauce...melt butter in skillet...add enough flour to make very thick...add milk, stir to over high heat to desire consisitency... Add hard boiled/poached eggs and or peas, salt, pepper, a little cayenne... heat thoroughly. Server over toast, leftover mashed potatoes, rice, or noodles. Enjoy!

Ken, I did put (cooking) on the thread line, but I added something and I guess part of it went away, that's happened before. I know what happened just don't know how to correct it, with re-typing everything. Should have checked it better.

never heard of the creamed eggs before? sounds interesting. with the leftovers if there are any we are pretty big eaters. ha we put all that would go together and make some homemade soup. since everything is already cooked its fast. dale

Cindy- When I was a kid my mom used to make something that sounds very similar. Don't recall that she used leftovers particularly, but it was a good dish- hadn't thought of it in years. Here is a recipe that I found in an old (1987) issue of Good Food mag. Can't say that it qualifies as cheap, but it may be useful if you have some leftover veggies to use up. I bought everything to make this last week and it cost $2.26 (nothing was on sale). It serves 4. It is a lot more economical if you have a garden! Lima Bean & Apple Salad Heat 1/2 inch salted water in small saucepan till boiling. Add 1 package (10 oz) frozen lima beans and cook covered until tender, about 10 minutes. Drain and cool under cold running water. Drain well. Quarter and core 1 red delicious apple, then cut into 1/4 inch dice. Toss apple with 1 Tb fresh lemon juice. Cut 1/4 of a red onion into short slivers (1 x 1/8 inch). Combine lima beans, apple, onion, 1/4 cup each diced celery and green pepper, 2 Tb vegetable oil, 1/4 tsp salt and 1/8 tsp pepper. Mix and let stand until ready to serve. (I think it is better after it has chilled for several hours). This is a fantastic salad and I heartily recommend it.

SOUR MILK WAFFLES

1 1/2 cups flour, 3 tsp baking powder, 2 tsp sugar, 1/2 tsp salt, 1/4 tsp baking soda, 1 1/4 cups sour milk, sour cream OR Buttermilk, 2 eggs, 3 TBSP melted butter, margarine, OR vegie oil.

Stir dry ingredients together. Beat sour milk, eggs and oil together with wisk or beater. Add flour mixture and beat hard. if too thick add more milk....

Cook on waffle iron. ---------------------------

Help I am trying to invent a recipe I have left over corned beef and was going to add homeade noodles and possibly caraway seeds and sour kraut in a 9 by 13 pan possibly some cheese Im going for a pierogi flavor, any suggestions ronda

I thought this was easy to make and easy to add diferant ingrediants to suit your taste.

WHOOPIE PIES

I made pumpkin ones today (yummy)

2c cooked and mashed pumpkin, 1/2 c melted butter, 1c milk, 1 tsp. pumpkin spices. 1 tsp. vanilla, 1/2 tsp. cream of tartar. 1 1/4 tsp. baking soda, 4 egg yokes, 4 c flour, 1 2/3 c sugar.

mix all together and drop by mixing spoon fulls on to greased pans, bake at 350 until done. about 15 minutes.

filling: 2/3c melted butter, 2c powdered sugar., 2 c flour, 1tsp. vanilla, 4 egg whites(soft whipped) mix all together and when cookies are cooled put in the filling.

Mine came out thick cookies so instead of putting 2 cookies together to make the pie effect I cut thecookies in half and put in the filling and then put the top back on.

Could mix in nuts, peanutbutter, chocolate chips, or m&m's. What ever you like. I like to experiment with recipes.

We like to have "garbage". I put whatever is leftover in fridge into frying pan and get it hot. Then add eggs and scramble! It's always different and always(except the time I put in sauerkraut and tuna casserole)good!

One of our favorites is like the first post, creamed eggs, except I put in ham or dried beef and serve over toast. Mom always made a white sauce and put in left over boiled potatoes and peas. Sure was good! think we'll have creamed potatoes for supper.
