Ham, Lamb and Potato Salad: Spring's almost here, Ressurection Sunday get togethers, lot of eating to do:~}. I don't eat pork and I only had lamb a few times, but I like potato salad, without mustard or pickles. This was my mom's recipe or close enough: Potato Salad:

Peel, dice, cook 6 potatoes

3 hard boiled eggs, chpd

2 diced celery stalks

1 large onion, chpd

salt to taste

Miracle Whip with 2t. sugar, enough to keep it together

Mix everything...you can fancy it up by putting slices of egg and parsley on it, make a face for the kids.

Well, its not potato salad and I haven't actually made it but I had it at a potluck and thought it was great.

GARDEN MACARONI SALAD

2 cups cook elbow macaroni 1 cup chopped cucumber 1/2 cup chopped green pepper 1/2 cup radish slices 2 Tbsp chopped onion 1/2 tsp salt 1 8oz pkg cream cheese 1/4 mayo 1/4 cup sweet pickle relish 1Tbsp prepared mustard

Combine macaroni, cucumber, green pepper, radishes, onion and salt...mix well. Combine softened cream cheese and remaining ingredients, mixing until well blended. Add to macaroni mixture; Mix lightly. Spoon and gently press into lightly oiled 6 1/2 cup ring mold; chill several hours or overnight. Unmold onto serving plate. Makes 6-8 servings.
