I know how these "stuck in the house" winter days can make a good cookie or other dessert a matter of sanity. So, here's one of our favorites. This is "DOUBLE FUDGE CREAM CHEESE BROWNIES" 1 CUP BUTTER 4 SQ. UNSWEETENED CHOCOLATE (or 12 Tbs. Cocoa + 4 Tbs. oil) 2 C. SUGAR FILLING: 1 1/2 C. FLOUR 1/4 c SUGAR 4 EGGS, slightly beaten 2 TBSP. BUTTER, SOFT 1 TSP. SALT 8 OZ. CREAM CHEESE, SOFT 1 TSP. BAKING POWDER 1 EGG 2 TSP. VANILLA 1 TBSP. FLOUR 1 C. SEMI-SWEET CHOCOLATE CHIPS 1/2 TSP. VANILLA

Heat oven to 350. In 2 qt. saucepan combine 1 c. butter and unsweetened chocolate. Cook over med. heat, stirring ocasionally, until melted (4-6 min). Stir in remaining brownie ingredients except chocolate chips. Fold in chocolate chips. Spread half batter into greased 13 x 9 baking pan. In small bowl stir together all filling ingredients. Spread over brownie mixture. Spoon remaining batter over cream cheese. (Batter will not entirely cover cream cheese mixture) Bake for 30-35 minutes or until brownies begin to pull away from sides of pan. 3 dozen. (Ha, Not at my house!)
