Keeping lettuce fresh

greenspun.com : LUSENET : Countryside : One Thread

Can someone tell me what to store lettuce in to keep it fresh. Once I tear and wash the lettuce (iceburg), I put it in an airtight container. It seems to only last about three days before I have to throw it away. Is it the airtight container that is causing this? Thanks, Sue

After washing it, use a salad spinner or shake the moisture off of it, then wrap the lettuce in a terry towel or several layers of paper towel, then place the wrapped lettuce in a container that can breathe. Refrigerate where the lettuce will not freeze.

No freeze?
Then my fridge just won't do, one side is frozen and the other is hot!
Ugh, I want a new fridge and DW won't budge.

You could use it up a little quicker by making hot bean salad: Spray casserole dish...layer lettuce in dish about 2 inches high...in separate bowl mix rinsed and drained kidney beans, chopped onions, chopped jalapenos and just enough mayo to hold it together...spread over lettuce...you can crush Doritos and put on top, but I don't...bake at 375 for about 20 minutes or til lettuce is tender...if you cook it too long, the lettuce will cook away to nothing...Enjoy!

Hello Sue, I never take the leaves off the stalk. I just take them off and wash them when I need them. I think that by washing them and then storing them moisture must remain on the leaves and cause them to go bad. I have had heads of lettuce last nearly two weeks this way. Iceberg lettuce isnt worth the time you are takin to worry about it. It has almost NO food value. " the whiter your bread, the quicker you're dead"; same thing goes for the color of your greens: darkest is best..............

We solved the problem by keeping leaf lettuce growing year round in the garden or sun porch. Any wilt goes to the wormbins.

I found that if you take it out of the clear plastic bags by the product and put it in the white plastic bags that you bring the groceries home in, it stays longer for some reason.
