An airboat Like they use in the Everglades, big motor, boat, someone just nuts enough to drive it.A high speed rapid fire launcher(nothing dangerous just tennis balls)or (golf balls) you could judge for range, accuracy and rate of fire.
Steam drag racers would be way cool.

Steam drag racers would be cool, though in slow motion =)But steam has already been done. Variations on a theme are OK as long as it hasn't already been done in another theme. Otherwise we could get steam powered lawnmowers, steam powered boats, etc ad nauseaum. :P

Why not a race, one expert an airboat guy the other a swampbuggy guy, the teams would race through a course flooded with about 2 ft of water.

A great swamp buggy is no match for even a bad air boat, except of course the amfib built by the biker bunch. However, a tug of war, buggy and boat in two ft of water and mud, would be intresting. The buggy would have traction problems and throw a lot of mud, and the boat would completely sog the buggy with blowing water and mud.
