My favorite-Chickpea Hummus! This comes out best made in a food processor, but if the chickpeas are cooked soft enough, you might be able to use a potato masher. 3 cups cooked chickpeas, 2-3 (or more, I like more) cloves garlic, a heaping Tbls. tahini (seseme seed paste), splash of lemon juice, salt to taste, and dash of cayenne pepper. If you want to dip corn tortilla chips, you can add just enough water to make it dip consistency. Leave it thick, and it makes a great sandwich filling with lettuce/tomato. Cindy, your bean dip sounds great, and I have all the ingredients! Thanks!

My neighbor gave me a recipe for cucumber dip.We always end up with more cukes than we know what to do with so I have utilized this dip and a recipe for cucumber bread(it's great!!!)I always shredd and freeze in ziplock baggies all the extra cucumbers that we don't consume or give away so this makes this recipe utilizeable any time of the year!! Anyway here is the cucumber dip recipe: 1 8oz pkg.cream cheese 1/2 c. unpeeled cucmber, shredded and drained 1/4t. worcestershire sauce dash of garlic salt Combine cream cheese and cucumber, blend until smooth, add worcestershire sauce and garlic salt.Mix well.Chill until ready to serve.Generally served with potato chips, but I'd like to hear other suggestions.

Mushroom dip - 2 cups dried mushrooms (shiitakes, morels, black trumpets or others with strong flavor). Grind and soak in just enough milk to reconstitute. If all milk is absorbed, add a little more. Finely chop about one cup of onion and fry until clear in butter. Add the mushroom mush, salt to taste, about 2 Tbsp finely chopped herbs (parsley, chives, celery leaves). Cook a couple of minutes, adding a little milk if needed. Mix with 12 oz cream cheese. If too stiff, thin with a little milk. Did I post my pumpkinseed dip recipe or just think about it? (Don't laugh - your brain will dry up someday, too.)

If I think about this dip, I won't eat it...but when it's offered at parties, I usually do....1 can Hormel chili w/beans, 1 lb. Velveeta cheese cubed. Put into a bowl and microwave until cheese is melted and chili is hot. Stir slightly. Serve hot with tortilla chips.

A more sane recipe.... drain plain unflavoured, unsweetened yogurt in a yogurt sieve (or line a regular one with cheese cloth instead), until most the liquid is off (discard or feed to critters). Then mix in 1 packet Hidden Valley Ranch Dressing mix, and mix well. Thin down to dipping consistancy using juice off of green olives. Lots of flavour for less calories. I like it with raw cauliflower.
