A last post; one for the seasons. We are under the convergence of an Alberta clipper and an Oklahoma hooker. Don’t you love those names? The temperature has dropped 40 degrees in the last 4 hr. It won’t get really cold; maybe –10F. The winds should drop it to –45F.

Had a great holiday meal in front of the the fireplace. Smoked quail [after you hickory smoke them, they are about the size of sparrows], wild rice with morels [which had been fried in butter], bean and onion salad [seeped in Italian wine and vinegar], and a good Champagne. It was followed with ice cream and berries.

What did you do?

There wasn't enough soup to go around. I have enough body fat to skip a meal, so to keep my mind off of it I sat in front of my computer and looked at things I shouldn't, and then I hijacked a thread.

I have been here since the original site started; way before Diane. You would know, then, that the email address was invalidated in Aug 00. So no.

You mentioned soup. I forgot. We started with home made fennel-leek soup. Great. Going to have some more now.

Sounds excelent Z.

Next time boil the quail till tender then smoke 'em just for flavor not for cook. If you've the patience, simmering down the boilings makes super dressing moisture or gravy if you keep simmering on down.

Will give it a try. Here, quail and wild turkies are like rats in NYC. You need to learn how to use them. These were parboiled and then smoked. They were very good.

Will look at your suggestion.
