Italian Sausage: Grind up pork with some pork fat (about 1/4 fat) and add salt, pepper, and fennel seeds in equal amounts to the meat. Put in casing. Or, in addition to the above spices, add half amount red pepper, and equal amount granulated garlic. If you have enough meat to make 10 large casing rolls of sausage, you will need 2t salt, pepper, fennel, and garlic, and 1/2 - 1t red pepper, depending on how hot you like it.

Breakfast sausage: 10 lbs pork, 2-3 lbs pork fat 6t salt, 4t sage, 4t pepper, 2t sugar, 2t paprika, 1t celery seed, 1/8t ginger, 1/8t nutmeg, 10 dashes hot tabasco.

One extra ingredient we use here is maple syrup. Only the home made kind works best!! YUM!! Michelle

For sausages the important thing is to get the salt right. For 1 kg. meat add 30 grams of salt. For salami you need to add a bit more salt 1 kg meat - 33 grams of salt.
