I think a electric cars would be good. They could compete in a number of ways:

1. A simple idea would be a race over rough terrain, with steep hills, streams, and rocky paths, and ending with a long straightaway.

2. A simple tug of war between the two cars. A good test of the good constuction between the two. I think it would be harder to make a powerful car than a fast car over a flat surface.
