need venison mincemeat recipe

greenspun.com : LUSENET : Countryside : One Thread

We just moved onto our little slice of heaven here (Yes!) and the world is really looking good. A friend of ours just shot a deer, and asked if I could make him some venison mincement. Problem is all of my cookbooks are still packed up in boxes, and will be for a while yet. Can anybody help me with a good recipe for making venison mincemeat? Now if I can just find those pots........

Hi, go to your search engine and type in "venison". When I did this I got a whole list of great recipes. It had sausage, roast and mincemeat. If you can't find it email me and I get the addy for you!

Here's my mothers recipe that we used with venison, growing up in AK. l0 c. meat (we boiled the meat off the neck bones, but any ground or chopped venison could be used) 8 c. suit 2-3 # raisins and currents, mixed 1 1/2 # brown sugar 1 pint molassas grated rind and juice of 3 lemons l c. frozen orange juice, replaced fresh orange juice when frozen became available. 1/2 # citron 3/4 # candied orange peel 3/4 # candied lemon peel 3 T. cinnamon 1 T. cloves 2 T. nutmeg 1 tsp. mace l tsp. pepper 2 tsp. salt 1 gal. chopped cooking apples, peeled and cored 1/2 gal. apple cider We heated this all together and canned it. Process pints and quarts 1 hr. at l0# pressure. Nothing tasted better than Mom's mincemeat pies. Ball Blue Book has a recipe, slightly different. I think the venison is what made this recipe special.
