Gather nuts now and freeze them!

I just wanted to mention to y'all that this is the time of year when you can get fresh nuts. I take this time to stock up on them and put them in the freezer so I can have good eating all year long. They freeze very well and nuts make an excellent snack. Be careful which nuts you choose as some, like macademia nuts are very high in fats. I usually freeze pecans, walnuts, filberts and almonds. While you are at it, check out paleolithic diet on the web to find some interesting ideas about healthy eating. I think I am going to give it a try. It certainly seems to make sense.

Colleen We just put 2 5 gallon buckets of pecans in the freezer from my grandpa's tree's. This method work great and on the plus side the nuts come out whole when you shell them if they are slightly frozen!!! My fingers are hurting now because I have done shelled 1/2 5 gallon bucket of pecans and 6 lbs. of walnuts.I shell them on the school bus in between runs and on field trips!! Yes we bake alot at christmas time.

How long can you store nuts without them being in the freezer? Aren't Mac. nuts high in unsaturated fat which then wouldn't be so bad?
