Jalapeno peppers/need recipes for jelly & relish

greenspun.com : LUSENET : Countryside : One Thread

I inherited 4 gallons of jalapeno peppers last night from a neighbor. My husband loves hot pepper relish and i would like to make a bunch of it as well as jelly. Since we moved, i still cannot put my hand on my recipe books (somewhere, in some box, in a galaxy far away). Have made this before so I know about gloves, etc...know I need sugar and vinegar, etc. but other than that I am clueless! Need full recipe directions, including canning times. Thank you and God bless.

Jalpeno Pepper Jelly:

2c. chopped jalapeno(or any hot pepper)

1/2c. chopped bell peper

1 1/2c. apple cider vinegar

1t. salt

6 1/2c. sugar

1 pouch certo pectin

Bring everything but the sugar to a boil,

Add sugar,

bring back to boil,

boil 1 minute,

jar, seal, turn upside down for at least 5 minutes, turn right side up, jars should seal.

Look under the county fair thread for my hot pepper canning recipe.

Enjoy!

There is a recipe for pepper jelly in the Sure-Jell box. I keep hearing it's good but haven't tried it yet. :)
