Try using a little baking soda to offset the acidity. This can also be done to replace up to 2/3 of the sugar in fruit pies. Use about (I would guess) 1/4 tsp per quart or less. Try it and adjust to your apples sourness. Re: the pies, use a tsp per large pie filling and then taste, adjusting as neccessary.

Try condensing it (boil it down) or adding some sweet juice like pineapple. Be careful using soda if you are canning anything. It can make acid foods unsafe for waterbath canning - otherwise a good suggestion - works well for tomatoes too, like tomatoe juice or soup that's too acidy.
