My grandmother used to make a sort of bread with them, like banana bread. I would think that you could use a banana bread recipe and substitute paw-paws for bananas.

I have a friend that makes banana-paw paw bread, and one that eats them as they are. I have a recipe for banana jam, I'll post it later. I tried canning it once and it fermented, but you could make up a batch to use right away, it tasted really good. gotta run.

Jennifer, I'm waay too far north for paw paws, but if it comes down to it, save them by pulping them out and freezing the pulp. I don't know if you'd need to add citric acid or not. But it would gain you some time to find a recipe. Gerbil

Contact Kentucky State University pawpaw research program for a copy of pawpaw recipes. Not jelly, but others.
