I need a recipe for canned apple pie filling. Any help would be appreciated. Thanks!

I'm afraid that since I made this recipe up, I do not have exact measurements. I'm becoming more and more like my mother in that respect. I fill a 22 quart stock pot about 2/3 (more of less) full of sliced apples. Then I add a small amount of water, enough so that the apples don't burn before they cook down. Then I add a few handfulls of flour (for thickening), sugar and oil of cinnamon. I have found that the powdered cinnamon discolors the apples and loses some flavor when canned. I cook the apples down, adjusting the flour, sugar and cinnamon to taste. Then I ladel the filling into jars and water bath process the same as sliced apples. My family and friends really love it. I miss my apple trees. I used to canned about 40 quarts every year when all the children were at home.

There is an excellent recipie in the Countryside archives (Baking) for pie filling. I used it to make the blueberry pie filling and it turned out fabulous! The thread is "Need recipie for blueberry pie filling" and it's Peggy's answer that you want. Excellent!

This is my sister in laws great recipe.Cut and peel two quarts of apples.Add two cups water and half cook the apples. Add 3 TBLsp tapioca,1/2 cup sugar,1 tsp cinnamon, 1/2 cup raisins. Cook for five mins longer. Process pints 20 mins. quarts 25 mins. Put pie filling in raw pie shell and bake.

A friend just gave this recipe to me Apple Pie in a Jar : 7 qts sliced/peeled apples 4 1/2 c sugar 2 tsp cinnamon 1 tsp salt 1 c corn starch 1/2 tsp nutmeg 10 cups of water 3 Tbsp lemon juice combine last 7 ingredients, heat until it bubbles - place apple slices in qt jars leaving 1 1/2" head space. pour hot syrup over apples and seal process 25 min in water bath or 10# for 10 min.

This is similar to the others. It is from Ball Corp. 6 lbs. apples, 2 cups sugar, 1/4 cup flour, 1 1/2 tsp. cinnamon, 1/4 tsp. nutmeg, 2 T lemon juice. Prepare the jars. Wash, core & peel and slice apples. Combine sugar, flour & spices in a large mixing bowl. Stir apple slices into sugar mixture. Let stand until juices begin to flow, about 30 minutes. Stir in lemon juice. Cook over medium heat, stirring frequently, until mixture begins to thicken. Carefully ladle hot filling into hot jars, leaving 1/2 inch headspace. Adjust caps. Process at 10# for 10 minutes. Or if you use freeze jars, this can be frozen. Yields about 6 pints. I end up using 2 pints for each pie, but I like them to be full. Enjoy!
