Bana chip drying, how can the sweetness be maximized? (kichen)

greenspun.com : LUSENET : Countryside : One Thread

Lynn has been drying banana chips, trying to get them as sweet and full flavored as the "store bought" variety. She has used jello dip , sugar water dip and fruit fresh, but the flavor of the home dried still finishes out "flat". Has anyone found a way of "turning on the flavor" of home dried chips? By the way , the jello dip left em soggy as boiled okra (yuck). Thanks in advance.

The Big Book or Preserving the Harvest has this recipe for dipping. 3Cups water, 1 Cup sugar, heat together and add 1 Cup honey, stir well. Dip and remove immediately in batches, drain well, and pat dry. Then dry as your normal process.

Good luck!

Try dippping the banana chips in Pineapple juice. They're delicious. Honey water is good too. They don't get crunchy like in the store.

Jay, try drying a few whole bananas, just as is. They are wonderful, I like them as well as any candy bar.

Lynn says thanks for the ideas, she is taking over all the dehydraters (glad I finished my beans and tomatoes yesterday). All the suggestions sound delicious, she s trying them all . We were both struck with the one of drying the whole 'naner , I got to thinking of a chocolate coating on it. Let you know how it goes, thanks.
