I need to start working on my stash of rice. Anyone have any good rice recipes? Here are a couple I'd like to share. (hope I formatted it right)

Tuna-Fried Rice

3 Tbsp. vegetable oil

2 eggs, lightly beaten

1 c. pea pods, stringed and cut crosswise in halves

1/2 c. chopped green onion

1/2 c. chopped red or green bell pepper

1 stalk celery, finely chopped

1 clove garlic, minced

3 c. cooked rice

1 (9 1/4 oz.) can tuna, drained and flaked

1/4 cup soy sauce

1/8 tsp. pepper

In small skillet heat 1 Tbsp. of oil. Add eggs; cook and stir until scrambled. Cut eggs into shreds; set aside. In large skillet, sauti pea pods, onions, bell pepper, celery and garlic in remaining oil for 3 minutes. Stir in rice; stir-fry for 3 minutes. Stir in egg, tuna and seasonings until combined; cook for 3 minutes or until heated. Serves 4

Mexican Rice

3 tablespoons bacon drippings or oil

2/3 cup chopped onion

1 1/2 cups uncooked rice

1 cup chopped green pepper

1 teaspoon chili powder

1/2 cup ketchup

2 teaspoons salt

1 cup tomato juice

3 cups water

In large saucepan, sauti onion in bacon drippings or oil, until golden. Add all other ingredients except rice and bring to a boil, add rice, stir and cover. Reduce heat to lowest setting and simmer for 20 minutes or until rice is tender.

Debra, Thank you for starting this. I bought a lot of rice (grain which lasts forever). Took bags of it to local mission, stocked up kids, kept some. THEN I went to grocery today for cokes. On sale, they had been two twelve packs for 5.00. Off sale, one pack would cost 2.90. The regular price today is 4.00 for a twelve pack. I was shocked! I did not stock coke, I stocked staples, and good thing too! Stocking of staples allows me the luxury of coke, only not the name brand.

Good recipe. I still have multiple of gravies, to coat an ammorgendan of noodles. Some times, You have to believe in the Super Natural
