Help my butter has a parmesan cheese smell

greenspun.com : LUSENET : Countryside : One Thread

Help! Does anyone know why my butter (made from cow's milk) smells like and has a mild flavour of parmesan cheese after one day. It tastes great the day it is made then the next day parmesan smell and taste.

Megan, did you get all the buttermilk out of it? It needs to be thoroughly washed in ice water, squished around and "kneaded" with a spoon in several changes of ice water, until the water stays clear. If that isn't the problem, I would suspect something your cow has been eating, possibly.

That would be my guess, too. It is a common mistake: the local grocery store has a brand that has the same problem. I ruined a double batch of cookies that I was making for a Ladies's tea a few weeks ago with the brand. It happened with icing last week, too. The Land o' Lakes always is good, but so expensive! I have been paying $2.89 for a gallon of milk too--maybe it is time to get a cow....

Just a thought, re: getting a cow (or goat): when doing figures on our critters, the dairy animals were the one thing we could count on actually showing a dollar profit (our own use, not sales) even when we were in Alaska and buying all our feed at high Alaskan prices! The only drawback is the time invested in them.

I think that i would be the diet of the cow. Try changing it and give it ago then.
