I don't really know what we're celebrating, but when has that ever been a deterrent to the FRL?

I"m bringing cervesa frio, and chicharrones. (It's a little known fact that chicharrones can be made only from Spanish-speaking pigs, otherwise they're just plain ol' porkskins)

Today Mexican citizens living in both Mexico and the United States celebrate Mexico's 1862 victory over the French on Cinco de Mayo, the fifth of May. This victory did not bring complete independence to Mexico, but it did prove to the world that Mexico wanted the freedom to rule itself and that it would fight courageously to obtain and preserve that freedom. It also revealed that a few people committed to a cause could triumph over a larger, better-equipped army of people less interested in the cause for which they were fighting. Finally, it showed that a country which had been defeated time and time again could, with perseverance at last emerge victorious.
And now:

Mexican Rice

1 1/3 cups uncooked rice 3 Tbsp. bacon drippings or cooking oil 1 medium onion, diced 1 Tbsp. minced fresh garlic 2 cups chicken broth 1 (8-ounce) can tomato paste 1 Tbsp. fresh parsley, finely chopped 1 tsp. ground cumin
Fry rice in oil in large skillet over medium heat until it turns yellow. (Do not let it turnbrown!) Add onion and garlic. Continue frying until onion is transparent. Add chickenbroth. Stir in tomato paste, parsley, and cumin. Reduce heat to simmering. Cover and cook until all liquid is absorbed (about twenty minutes).

Man, oh Man... Please don't tell me that Cinco de Mayo is for Mexico. All these years, I thought that it was a celebration of my birthday. *grin*

Party on People! If you happen to live in a area that has good Mexican hangouts, enjoy some of the "real" Mexican food. Way better than the American-Mexican version. Ah, I miss San Antonio (in ways).
