How do you pickle garlic

I was reading the questions on what do you eat and see one of the responses listed pickled garlic. How do you pickle garlic and what do you use it for? Sounds interesting since we are suppose to eat more garlic for good health.

I use a 5 percent pickling solution, same as for any other pickles. Hot pack in canning jars after pickling. Although...I have heard that garlic has much more beneficial healing properties if it is NOT heat processed, but eaten raw.

I use 1/2 pt jars (they're nicer for giving, and I'm not tempted to open a second jar, where a whole pint might disappear while I'm preparing dinner, they're so good!) I cold pack the garlic cloves with a couple of peppercorns & either fresh dill or dried dillweed, depending on what I have. I then use a regular pickle brine, hot, pour over and seal.

I leave them, if possible, for 4-6 weeks before opening. These make an excellent hostess gift, or added to a pickle tray, they're generally the first to go.

Small button mushrooms also pickle well this way -- YUMMY!

Tracy, that sounds so yummy, can you do garlic and mushrooms together?

If you like garlic, you can. The mushrooms would really take on the garlic flavour. Costco sells the big jars of pickled garlic mushrooms (I've never actually seen a garlic clove in the jar -- they must use minced) for an astronomical price. Don't see why it wouldn't work if you did them at home.

Tracy ~ once again we cross paths! I'll try your recipe, but I'll also give you mine. Go to your Ball Bluebook, and look for the recipe for Dilly Beans, which are also very good. To make your pickled garlic, follow the directions, but forget the beans! I agree ~ this is a like it or leave it recipe. We, and some of our kids, find this to be SOOOO good. Others think we are taste-bud deranged! Go figure - but enjoy!
