From beans to lunch

Ok. This is part of how I'm reclaiming my investment on the "extra" extra food that I put aside for strangers in need. I came up with this when I noticed a severe shortage of starving pollies to feed. I also needed a convinent lunch.

1 pound dried beans, kidney or roman.

1/8 cup of rice of your choice.

1/4 cup immitaion bacon bits. (You can substitute real ones or smokey ham flavoring)

2 teaspoons salt.

2 fresh sprigs of cilantro, or 2 tablespoons of the dried chopped kind if it's green looking. Make it 4 tablespoons if it looks greenish gray.

2 habenaros or 4 jalapenos. 8 drops of habenaro sauce if you don't have fresh peppers.

3/4 cup dehydrated cheese or to taste.

1 tablespoon ground black pepper.

1 small can corn.

4 table spoons dehydrated onions.

Soak the beans according to the directions on the package. If you got rid of the package when you dumped them in to a mylar lined bucket then put the beans in a bowl and cover with water by three inches. Let soak over night.

Drain the beans and rinse them twice.

In a large enough to hold twice as many soaked beans as you have add the beans and rice and just enough water to cover them and bring to a boil. If water becomes too low add enough hot water to just cover again.

Reduce to a simmer and add the peppers, the cilantro, the bacon bits and the onion. Cover and let simmer on a back burner until the beans are very tender.

Remove the peppers and cilantro sprig. (Leave the chopped cilantro in if you used dried.)

Add the salt and pepper, dehydrated cheese and let simmer further on low heat until beans start to get mushy and liquid is thickened. You are aiming for a spreadable consistancy here. The rice should be mostly dissolved.

When mixture is thick enough to spread stir in canned corn and remove from heat to let cool.

Can be eaten hot or cold with corn chips. If it tastes real cheesy then your dehydrated cheese is stronger than mine (Chedder Buds) and you should use less. (Unless you like it that way). I have a feeling that you could do alot with this base "bean/rice" paste since the bean flavor takes spice very well. It's full of protien and fiber. In fact, if you are on a low fiber diet you better work up to eating this over the course of a few weeks or you'll get the winds something terrible.
