When I was lurking the forum as I do daily, I noticed Jean mentioning that she was glad she had powdered milk for hot cocoa....I WANT THE RECIPE PLEASE!!

Hi Krista, I have a recipe for hot cocoa and thought I would give you this one.

Cocoa Mix 7 5 quart equivalent of nonfat dry milk 7 2 lbs. Nestle's Quik 7 1 lb. confectioners sugar 7 16 oz. jar of powdered dairy creamer Mix the above ingredients well and store in an airtight container. Add four teaspoons of mix to a cup of boiling water for a quick cup of cocoa.

I also have some for flavored coffee if anyone wants them.

Also if Jean has a different mix I too would like to have it.

I have a better one that doesn't use things you normally don't buy By the batch 6 1/2 cups nonfat dry milk 3/4 cup cocoa 18 packets sweetner or 3/4 cup sugar Use 1/3 cup mix to 8 ounces hot water Sometimes you might like to use more cocoa and sugar to make it richer

I don't make a powdered mix. But this recipe is very good. 1/2 cup sugar, 1/3 cup hot water, 1/4 cup cocoa, dash salt -mix these in a saucepan and heat over medium until mixture boils, stirring constantly; cook & stir 2 minutes. Stir in 4 cups water and one envelope of Sanalac, heat but do not boil. Remove from heat and add 3/4 tsp. vanilla extract (sometimes I do & sometimes I forget). It's no secret recipe, it's on the cocoa box! Sanalac is a good powdered milk, my kids never complain about it. Enjoy!

This is one that we developed here at my place. Works well for us.

Better Than Store Bought Hot Cocoa Mix Very good on those cold winter nights

1 cup unsweetened baking cocoa 2 or 3 cups white granulated sugar 0.5 teaspoon salt 4 cups instant powdered milk

Blend all dry ingredients until thoroughly mixed. Store in a tightly capped glass jar in the ubiquitous dark, cool, dry place. To use: Mix with very hot water to taste then drink as hot cocoa or chill as chocolate milk. I'd start with about two tablespoons of the mix to a cup of water and adjust from there. Some like a thicker mix than others.

Notes: About a quarter teaspoon of grated nutmeg per recipe improves the flavor a lot. The same for a drop or two of vanilla extract per mug. Alternatively you could put a vanilla bean in the cocoa jar, fill with the mix and allow to set for a week or so before using it. Refill with mix as needed. If using a really strong cocoa powder (such as Penzey's or similar) you may want to increase the dry milk to about 4.5 cups for every cup of cocoa. Kids generally prefer a sweeter taste so you may want to use three cups of sugar for them. Using whole milk powder will give a richer taste.

I've never been much for store bought hot cocoa mixes but this stuff has caused me to go through quite a bit of Hershey's cocoa.

These are just how I copied them, hope you enjoy some of them as much as I do.

Cafe Viennese

1/4 c Cremora (or other coffee creamer)

1/3 c sugar

1/4 c instant coffee

1/2 tsp cinnamon

Cafe Swiss Mocha

1/4 c Cremora (or other coffee creamer)

1/3 c sugar

1/4 c instant coffee

2 tbsp powdered cocoa, baking kind

Cafe Bavarian Mint

1/4 c Cremora (or other coffee creamer)

1/3 c sugar

1/4 c instant coffee

2 tbsp baking cocoa

2 candy Peppermints (leftover Candy Canes work too!)

Cafe Cappuccino

1/4 c Cremora (or other coffee creamer)

1/3 c sugar

1/4 c instant coffee

1 orange flavored piece candy (I like Sunkist candies for this)

Pick any of one the above combinations and process in a blender on liquefy until well blended. Store in an air tight container.

When ready to use: Spoon into coffee mug, add hot water & stir. Amount used will be according to individual taste.

YYYYYYYYYYYYY

Mocha Coffee Mix

1 c nonfat dry milk powder

3/4 c sugar

2/3 c powdered nondairy creamer

1/2 c unsweetened cocoa

1/3 c instant coffee, pressed through a sieve

1/4 c brown sugar, packed

1 tsp cinnamon

1/4 tsp salt

1/4 tsp nutmeg

Combine all ingredients in 1 quart airtight container or decorative gift jar w/ lid. Makes about 3 1/4 cups mix or 10 to 12 servings.

For single serving: Place rounded 1/4 cup of Mocha Coffee Mix in mug or cup, add 3/4 cup boiling water. Stir until mix is dissolved. Serve immediately. Makes a great gift -- put some in a ziploc bag & then put into a decorative coffee mug.

Orange-Spiced Coffee 7 1 cup dried orange rind 7 2-1/2 Tbsp. ground cinnamon 7 2-1/2 Tbsp. ground cloves 7 1 pound freshly ground coffee Place all ingredients in a 1 gallon ziplock bag, seal and shake. Spoon into airtight containers. Use like regular ground coffee.

Spiced Tea Mix 7 2 cups Tang 7 1 cup lemonade mix 7 1/2 cup instant tea 7 1/2 cup sugar 7 1 tsp. cloves 7 1 tsp. cinnamon Mix and store in closed container. Use 2 teaspoonfuls per cup of boiling water.

Cappuccino Mix 7 1 cup powdered instant non-dairy creamer 7 1 cup chocolate milk mix 7 2/3 cup instant coffee granules 7 1/2 cup sugar 7 1/2 tsp. ground cinnamon 7 1/4 tsp. ground nutmeg Combine all ingredients, mix well. Store in an airtight container. To serve, place 1 tablespoon plus 1 teaspoon mix in a cup. Add 1 cup boiling water; stir well. Great served with a scoop of ice cream or whipped topping. Yields about 33 servings.

Minted Cocoa Coffee Mix 7 1-1/2 cups non-dairy creamer 7 1 cup sugar 7 1/2 cup instant coffee granules or crystals 7 1/2 cup cocoa 7 dash of salt 7 6 hard peppermint candies crushed In large bowl or container, combine all ingredients; mix well. Store in tightly covered container. To serve, spoon 2 to 3 tablespoons mix into cup or mug; fill with boiling water. Stir to blend. If desired, garnish with whipped cream.

Cafe Mocha Mix 7 1-1/2 cups instant espresso coffee granules 7 1/4 cup unsweetened cocoa 7 1/4 cup non-dairy creamer 7 6 Tbsp. confectioners' sugar Combine all ingredients in a small bowl. Mix well. Store in an airtight container. Makes 1 cup of mix, enough for 8 to 12 servings. To Serve: Combine 1 or 2 tablespoons of mix with 3/4 cup boiling water.

Viennese Coffee Mix 7 2/3 cup instant coffee powder 7 2/3 cup sugar 7 3/4 cup dry non-dairy creamer 7 1/2 tsp. cinnamon 7 dash of ground allspice, ground cloves and ground nutmeg Combine and put in a festive airtight container. To mix, add 4 heaping teaspoons to 8 oz. boiling water.
