I will be shocked if anyone can fully answer your question here. Why? Well, the following is from a September, 1997, article:
"Since becoming pope in 1978, John Paul has performed 278 canonizations and 768 beatifications  more than all other popes in this century combined  many of them in large groups martyred for their faith."

For updated numbers and names of the people honored, you could try writing to the "Congregation for the Causes of Saints, Vatican City, Europe." Sorry, I don't have a phone number or e-mail address for you!
