Ah, the underrated meatloaf. The great American meal. Got a good recipe? I heard tell once of a vegetarian meatloaf-like product; anyone have any info?

Here is a low fat turkey meatloaf that is really delicious. I make it a lot and can polish it off in no time.

1 pound ground turkey breast (all white meat) 1/2 cup bread crumbs (cracker crumbs work just as well) 1 cup cooked brown rice (do not omit!) 1 medium to large onion, chopped 1/3 cup finely chopped celery (optional) 1/4 cup tomato sauce 1 egg (or 2 egg whites) 1-1/2 tsp. spicy or Dijon mustard 1 tsp. garlic powder 1/2 tsp. onion powder 1/2 tsp. ground thyme 1/8 tsp. white pepper

GLAZE: 6 T. ketchup 2 T. honey

Preheat oven to 350 deg. Combine all ingredients except ketchup and honey and mix well. Turn mixture into 7- or 8-inch loaf pan and bake for 40 minutes, until firm and brown on top.

Combine ketchup and honey. Spread evenly over top of loaf and bake 5 minutes longer.
