Looking for wax wrapped cheese. Where is it??

Does anyone have a source for cheese wheels, 2-5 pounds, for chedder and swiss. I ordered from Fennimore cheeses and they now can not supply them any longer. It would be a big help if someone knew the answ

Washington State College in Pullman Washington has a cheese factory and makes cheese and cans it. They don't guarantee any shelf life on it, but I know from experience if the cans are kept in a cool dark place they last a long time unopened. They are about 12" diameter wheels/cans. I strongly recommend their cheese. They have an email but I lost it when puter crashed. But try looking for a web site. If you find it, please post. Another thing, they start running out this time of year due to people giving it as Christmas gifts.

I have just been in contact with Fennimore Cheese. They no longer wax their cheese wheels but they are red wrapped. They assured me that they would keep if stored in a cool, dry place. They are reasonable on their prices and I have just ordered 5 of the 5# wheels. The lady with whom I spoke said she had stored them for as long as two years with no problem. Hope this helps.

I used WebFerret (d/l shareware from ZDNet.com) to search for Pullman AND cheese which led me to WSU web page & THEIR search engine and also used the words 'Cougar Gold Cheese' which led me to the canned cheese page:

If you scroll down a bit you'll find sections on storing cheese and storing butter. I intend to try canning Velveeta and butter and margarine, and I'm going to wrap my own cheese in wax and cheesecloth if I can't find any in stores. I've found large chunks of cheddar wrapped in wax (but not enough wax for long-term storage) at Wal- Mart super centers.

My experience with #5 wheels of cheese is that their is too much open at one time. We have had a vacuum sealer for 5 years & use it constantly. If you watch your local grocery for sales on cheese, take home, unwrap then vacuum seal in bag. Will store for two plus years if kept in cool dark place. I have personally eaten two year old cheese & taste fine to me! Big benefit here is more varity in smaller quanitys. : SPOCKMAN
