Can we bake now for next year??? Cookies and crackers,etc

I notice the tins of butter cookies from Denmark in the stores. Can I bake things at home now and store them in tins somehow so they don't get stale or rancid?? If so, anyone have great recipes that will "keep" well???

Before Christmas of last year, we baked all kinds of cookies and put into half gallon canning jars and vacum packed them. I opened one the other day and they are good. NOT as fresh and crunchy as right out of the oven, but fill the bill. How long they will last, I have no idea. But they have lasted over 7 months so far. Hannah
