Dry that zucchini

Zucchini and other summer squash can be dried.

"Before drying I slice them into quarter-inch thick rounds, quickly blanch them (just a few seconds dip in boiling water), and dry them in the dehydrator overnight. They're ready when they snap in half when bent. [Author likes to eat dried zucchini chips.]"

Old Git: I'm not thrilled by zucchini in any form. It's OK sliced into a salad, and maybe dried with some salt, it could be dipped into sauces or salsa, but I don't know anyone who craves this vegetable. People who grow them wait until they're too mature and then wonder why nobody wants them for free...

Love Zucchini!! Use it to make low fat lasagna, slice it longwise and voila, layer it with sauce made from your spaghetti sauce & powdered cheese preps, oh, and I throw in a few mushrooms & spices too. Also bean sprouts make wonderful 'spaghetti noodles', very wholesome & useful.

Try them with onions and garlic wraped in foil, just a drop oil. Toss on grill, before meat, when meat is cooked so are vegs.

You're right, R, harvesting zucchini at a young stage is crucial to developing any affection for this (and many other) vegetables. I'm not keen on veggies from the cucurbit family, but they're easy to grow and prepare, and also inexpensive. I'm growing eggplant this year for the first time and I'll pick it before it gets huge and bitter, see if it's a big enough improvement over the store-bought kind. Love eggplant parmigiana!

I did not know you could dry zucchini!! It grows really easy around here so this is great info. I found a cook book with Z. receipes that looks interesting. Anyone for some receipes?? I use it with brown sugar and it is wonderful.
