All the pigs that died because you love bacon, will finally get their reward and get even with you when you kick the bucket with your arteries gunked up with bacon fat!!! What goes aroun, comes around!! This NEVER fails!!!

I don't mind ending up as bacon fat. But seriously, canned bacon is very hard to find in my area southcentral PA, (to my knowledge). I havn't seen it for about 10 yrs. Any help out there??

I can't find it either! Not in Hawaii. It used to be packed in Denmark and lasted for years... I'd be willing to buy it through the mail or over the internet if there were a good supply at a reasonable price. Even in case or larger lots.

How can I make a decent spaghetti ala carbonara without it?

I lurk a lot and usually only post here about communications or civil defense issues but I can't find canned bacon anymore either. I used to by it at K Mart for camping trips when my boys were young. This is very serious, I love bacon, this may become a personal 10.

Ok, guys...heres the skinny on the bacon. I called the meat importers last year to find that there is no longer canned bacon being imported to the lower 48...only to Alaska. So since I had a friend in Fairbanks who comes down here for the winter, I had her bring me two cs (48 cans). She will bring me two more this fall. But to my knowledge, that is the ONLY place you can buy it. This brand, Celebrity, comes from Hungry. Celebrity Foods is in Elizabeth. NJ. I can find no email and no telephone listing. Buy the way, they also hand a Spam like product that is soooooooo superior to Spam. It has Chicken in it along with Pork. Ekards Drugs sometimes has it and I buy it all when ever I see it. Maybe there is someone out there that lives in or around Elizabeth, NJ that could find out how we can order their products. Thats the best I can do, hope it helps.

The older Eurpoeans used to solve this problem before they had refrigeration by cooking the meat and storing it in Lard. The lard would congeal, no oxygen could get in and the meat would be safe for a year or more without refrigeration. Pork could also be salted. This could be confirmed by the grandmother set, neighbors etc. who may have done this in their earlier years. I see cured hams in the stores that do not require refrigeration. If the meat did spoil, it would smell bad and the problem would be obvious.

We are home canning bacon. Just roll it in parchment paper, and place in wide mouth jar. Then can in pressure canner for recommended amount of time for your elevation (I use pint jars, can for 75 minutes at 10lbs of presssure, my elevation is under 1000 ft). The bacon is kinda of soft when you open it, but you can crisp it by frying, but get a splash screen, it pops alot!
