Does anyone have a recipe for Granola Bars?

I'm sitting here w/250 pounds of mixed flakes and trying to think up different ways to use them so we don't get REAL tired of them any time soon. They make great cooked cereal and they're good in bread and I have a killer recipe for granola. However, when I was in the store the other day I picked up a couple of boxes of granola bars and thought to myself "that's dumb, why don't you just make them". Easier said than done. I've been through all my cookbooks, to a couple other BB's and checked the web with no results so if anybody out there knows how to make them I'd appreciate some feedback. Email is real. Thanx

Try these. Just substitute your flakes for the rice krispies

*** Rice Krispie Bars *** 6 cups Kelloggs Rice Krispies 1 bag of white marshmallows 3 tablespoons butter or margarine No-stick cooking spray

Melt the margarine in a no-stick pan and add the entire bag of marshmallows. Stir over medium heat until the marshmallows have completely melted. Add Rice Krispies and mix together well. Pour mixture into a 9" x 13" pan that has been greased or sprayed with no- stick cooking spray. Use a baggie that has been sprayed with no-stick spray to spread and flatten mixture. Cut into squares when cool. Kids love making and eating these easy treats!

This is a variation of the usual bars.

1 12 oz. bag of butterscotch chips 1 cup of peanut butter 6 cups of Rice Krispies

Melt the chips and peanut butter together. Mix in the cereal and press into a 10x13 pan. Keep refrigerated. Yummy!

Chewy Raspberry Streusel Bars 4 cups Kellogg's. Rice Krispies. cereal, cruched to 1 1/4 cups 1 cup all-purpose flour 1/4 cup sugar 1/4 cup margarine, softened 6 tablespoons light corn syrup 1 can (12 oz., 1 1/4 cups) red raspberry filling Vegetable cooking spray

In large mixing bowl, combine Kellogg's. Rice Krispies. cereal, flour, sugar, margarine, and corn syrup. Remove one cup mixture and set aside for topping. Press remaining cereal mixture evenly and firmly into bottom of 9x9x2-inch baking pan coated with cooking spray.

Bake at 3500F about 15 minutes or until light golden brown. Remove from oven and spread raspberry filling over hot crust. Sprinkle evenly with remaining cereal mixture. Return to oven and bake 20 minutes longer. Cool completely in pan on wire rack before cutting into 3x1 1/2-inch bars. Low Fat!

Granola Bars (ovo & optional honey)

1/2 cup light corn syrup 4 egg whites 2 tablespoons honey or molasses 2 teaspoons vanilla 1 cup brown sugar 1/4 cup granulated sugar 3 cups oat bran 2 cups rolled oats 1 cup all purpose flour 2 1/2 cups Rice Krispies 1 teaspoon cinnamon 1/2 cup raisins (optional)

Preheat oven to 350F. In large bowl, mix corn syrup, egg whites, honey and vanillan with the sugars, gradually blen in dry ingredients in order listed. Spread mixture to about 1 inch depth in two 9 X 13 iinch baking pans sprayed with Baker's Joy. Bake 20 minutes (or microwave for 9 minutes on medium setting)

Allow to set for at least 30 minutes before cutting into bars. Bars will firm up as they cool, so be sure not to overbake

Here's another one for you to try.

Cranberry Granola Bars Prep: 15 min, Cook: 20 min. 1 cup all purpose flour 1 tsp. baking powder 1-1/4 cups light brown sugar, packed 1/4 cup vegetable oil 3 large egg whites 2 cups low fat granola cereal with raisins 1 cup dried cranberries, or chopped dried tart cherries

Preheat oven to 3500F. Sift together flour and baking powder in a bowl. Combine next 3 ingredients in a bowl and mix with an electric mixer on high speed until smooth. Make sure there are no lumps of brown sugar. Add dry ingredients and beat on low speed until just blended. Stir in granola and dried fruit. The batter will be very thick. Transfer batter to a lightly oiled baking dish and smooth the top. Bake 20-25 minutes, or until golden brown.

This recipe serves 12 people. Because this recipe is for a particular size pan, it adjusts the number of servings only in multiples of 12.

Per serving: calories 244, fat 5.7g, 21% calories from fat, cholesterol 0mg, protein 4.1g, carbohydrates 44.6g, fiber 1.6g, sodium 44mg.

GRANOLA APPLE BARS Introduce more fiber into your family's diet with these wholesome bars. They're easy enough for your kids to prepare.

INGREDIENTS 2 cups granola with dates and raisins 1 teaspoon vanilla 1/2 cup all-purpose flour 1 egg, beaten 1/2 teaspoon baking powder 1/2 cup sunflower nuts 1/2 teaspoon baking soda 1/2 cup coconut 1 cup MOTT's Cinnamon Apple Sauce

DIRECTIONS Heat oven to 3500F. Grease 8 or 9-inch square pan. In large bowl, combine all ingredients; mix well. Pour into prepared pan. Bake at 3500F for 25 to 35 minutes or until toothpick inserted center comes out clean. Cool. Cut into bars.

YIELDS: 20 bars.

3/4 cup all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt 3/4 cup firmly packed brown sugar 1/4 cup granulated sugar 1/3 cup margarine, MELTED 2 egg whites 1 1/2 cups Kelloggs Low Fat Granola cereal Low Fat Cooking Spray

Stir together flour, baking powder and salt. Set Aside. In medium mixing bowl, beat together sugars, margarine and egg whites until well blended. Stir in flour mixture only until combined. Stir in cereal. Spread evenly into 9x9x2" baking pan coated with cooking spray. Bake at 3500F about 28 minutes or until lightly browned. Let cool completely before cutting. Store in airtight container. Yield: 24 bars.

When your bistro becomes a Fortune 500 company due to your signature maple granola bars, please think fondly of Baker Boulanger (and advertise with us...or something). These are very good. The health food craze gave granola bars a bad name. They are healthy but they are equally a wonderful treat. If you insist, you may add chocolate chips or chunks.

1/2 cup unsalted butter - melted and cooled 1/4 cup honey 1/4 cup pure maple syrup 1 teaspoon pure vanilla 2 cups granola 1/2 cup coconut - shredded sweetened 3/4 cup chopped dates 1/3 cup raisins 1/4 teaspoon cinnamon 1/4 teaspoon salt 3 tablespoons all-purpose flour 1 tablespoon sesame seeds 2/3 cup whole pecans

Preheat oven to 350 F. Line a 9 by 9 inch square pan, or preferably, a 7 by 11 inch brownie pan with parchment paper.

In a large bowl, stir together the honey, maple syrup and vanilla. Blend in granola, coconut, dates, raisins, cinnamon, salt, flour, sesame seeds and pecans. Spoon into prepared pan. Place pan on a baking sheet.

Bake on lower rack of oven - 18-22 minutes - until top seems set. Refrigerate about one hour before cutting into squares.

Makes 12 squares. Best stored individually wrapped in waxed paper and frozen. --------------------------------------------------

Chewiest Granola Bars

1 cup Brown sugar 1/2 cup Light corn syrup 1/2 cup Vegetable margarine 2/3 cup Peanut butter 2 teaspoons Vanilla extract 1/2 cup Sunflower seed 3 cups Quick oats* 1/2 cup Coconut grated 1/3 cup Wheat germ 1/2 cup Raisins 1 cup Carob chips 1 Other nuts or dried fruit

*You may substitute 1-1/2 c crisped rice for 1-1/2 c of the oats. Preheat the oven to 350 degrees F. Coat the inside of a glass 9x12 baking dish with light vegetable oil. In a large bowl, combine the sugar, corn syrup, vegetable margarine, peanut butter and vanilla extract, and stir well to the consistency of a paste. Stir in remaining ingredients and work the mixture so that several large clumps adhere together. Using your fingers, press the mixture into the baking dish. Bake at 350 degrees for 15-20 minutes until the preparation turns golden brown. Allow to cool completely before cutting into bars.
