inexpensive salad dressing

Salad dressing is very expensive to buy off the shelf. Here are a couple of reicpes that are so delicious and so easy. They can be non fat or fat, dpending on the mayonaise you use.

Onion: Chunk up a good size onion and then put in blender. Pour into a bowl and add one qt of mayonaise. Mix it up with a spoon (don't use blender to mix) and pour back into mayonaise jar. Refrigerate and let set 3 days before using. You can do the same thing with garlic, but it doesn't take much garlic. I also do the same by adding a couple of packages of crumbled blue cheese. I usually have all 3 kinds in my refrig since we use it on veggies all the time. My husband even uses it on his sandwiches rather than the plain mayonaise. It sure beats the store bought stuff and you can use the least expensive mayonaise and get excellent results. This isn't exactly a y2k hint, but the money you save will buy a pound of beans.

My family is spoiled! I quit buying salad dressing in the store years ago. I make several different kinds and we always have at least 2 in the fridge.

1/3 cup of Balsalmic vinegar 2/3 cup of olive oil 1 tsp of dijon mustard 2 to 3 tbs of honey - - - - - - - - - - - - - - - - 1/4 cup of freshly squeezed lemon 1/2 cup of olive oil 1/4 tsp of basil 1 crushed clove of garlic salt & pepper to taste

I got a dozen more if you need.

Would anyone have an affordable steak sauce recipe? Perhaps one made from modified barbeque sauce, and that would cost _less_ than the steak? That would be refreshng.

Haven't located drsing receipe but will. Re: steak sauce....it's not really steak sauce more like barbaque cross on steak sauce. Use matching amts of catsup and brown sugars and melt. simmer on any meat.....makes spam delicious! Pork chops are out of this wonderful with it!

ok...found dressing receipe. Equal amts of mayo, milk (or cream) and sugar. Mix well. Add a pinch of salt and pepper. Very sweet and great on fresh lettece.

Here's a couple more dressing recipes.

French Dressing:

4 tsps sugar 2 tsps salt 1 tsp pepper 1 tsp dry mustard 2 tsps paprika 1 crushed clove of garlic 1 cup of vinegar (white will work fine) 1 cup olive oil

This is my Thousand Island Recipe, but it does need to be refrigerated:

1 cup of mayo 2 tbs of relish 1 chopped up boiled egg Add ketchup till it gets to the taste & color you prefer.

About that lettuce (g) I've always got sprouts in one stage or the other.....some in the fridge while I'm growing another batch or two on top of the cabinet. I add this to my salads and sandwiches, and it's yummy in soup too.

I'm off to the mountains to help friends who have relocated because of Y2k. I'll be staying awhile to help them put in the garden and get some other chores done. They seem to think they need an ol' farm girls advice.

SPAM TOSTADA SALAD:

8 flour tortillas. 1 tablespoon vegtable oil, 1 12 ox can spam, cut into 1/2 inch strips, on onion sliced, lettuce, chopped tomatoes, 1 can olives (optional) and shredded monterey jack cheese or cheese of choice. In large skillet cook tortillas inoil 2-3 minuts until crisp, set5 aside. In same skillet, cook spam, and onion 7-10 minutes. put together other ingredients. Place spam on top of tortillas, top with lettack mixture. Serve with salsa.

SPAM & POTATO CHOWDER:

2 TBS butter, 1/3 cup shredded carrot, 1/4 cup finely chopped onion, 4 cups milk, 3 cups peeled and diced potatoes, 2 cans cr of chiken soup, 1 can spam cubed, and 1/2 tsp dried thyme. Mellt butter, stir in carrot and inion. Stir in remaining ingredients. Bring to boil. Cover, cook until potatoes tender.

SPAM WESTER PASTA SALAD: 3 cups cooked macaroni, 1 ( 12 oz) can spam cubed, 1 cup cubed cheddar cheese, 1 cup carrots, 3/4 cups celery, 1.4 cup chopped green bell pepper, 1/4 cup chopped onion, 1/2 cup mayo or salad drsg, 2 TBS creamy mustard, 1 1/2 tbs barbacue sauce. In large bowl, combine macaroni, Spam, cheese, carrots, celery, bell pepper and onion. In small bowl, combine remaining ingredients, toss with macaroni. Cover and refrigerate 1 hr.

SPAM BROCCOLLI AND RICE SOUP: 1 PKAGE BROCCOLI RICE AU GRATIN, 2 CUPS WATER, 1 TBS BUTTER, 2 CUPS MILK, 1 CAN CR OF BROCCOLI SOUP, 1 CAN SPAM 1/4 CUP SHREDDED CHEDDAR CHEESE. In large saucepan,combine broccoli rice, water and butter, Heat to boiling. Cover and simmer 20 minutes. Add milk, soup, span and cheese . Heat to boiled.

SPAM CORN CHOWDER: 1 CUP CHOPPED ONION, 1 TBS BUTTER, 11/2 CUPS DICED PEELED POTATOES, 1.2 CUP GREEN BELL PEPPER, 2 CUPS CR STyle corn, 2 cups milk, and can of spam cubed. Saute onion, in butter. Add potatoes and pepper. Cook 2 minutes stirrintg. Add corn and milk . Bring to boil. Reduce heat and simmer until potatoes are timmer. Stir in spam. Simmer 2 minutes.

Spam Western Bean Soup: 1 cup chopped onion, 1 tbs veg oil, 3 cdans condensed chicken broth, 1 can tomatoes, 1 cup carrots, 1.3 cup chili sauce, 3 TBS packed brown sugar, 3 TBS cider vinegar, 2 tsp worchestershire sauce, 2 tsps mustard, 2 cans pinto beans, 1 can spam cubed. Saute onion inoil. Stir in chicken broth, tomatoes,carrots, chil sauce, brown sugar,worchestershire sauce and muistars. Mash half the beans with a fork;, add to whole beans and add to soup. Bring to boil. Cover and simmer. Stir in spam.

Spambled Denver Sandwhiches: 1 can spam, 1/4 cup onion, 1 tbs oil, 4 eggs beaten , 8 slices bread toasted. In small skillet cook and stir spam and inion in oil. Pour eggs into skillet. Cook. Cut into four wedges, turn. Serve each wedge btwnn bread slices or open faced.

Spam Pizza: 1 onion chopped, mushrooms(optional), 1 tbs veg oil, bread slices, 1 can spam cubed, 1 cup chucky style spagetti sauce, mozzarella cheese. Saute veggies in oil. Sppon veg's and smal on bread( any kind, french or regular). spoon spaghetti sauce over spam. Sprincle with cheese. Bake a few minutes.

Creamy Spam sandwhiches: 1 can spam luncheon meat, finely cubed, 1 can cr of mushroom soup, 1.2 cup shredded cheddar cheese, 1.4 cup onion, bread. Combine spam, soup, cheese and onion. Spread on toasted bread. Bake a few minutes.

If you mix plain mustard with plain ketchup, know what you'll get? Heinz 57 sauce. I'm not kidding. Discovered this by accident.

And yes--I'd like to read some "one dish tuna" recipes--particularly ones that make tuna taste like anything but tuna! (My child hates tuna!)

Sorry it took so long to get to tuna Receipe. I missed the post earlier.

Tuna Pasta Primavera Salad: chock full of garden veggies. Don't hesitate to use any fresh veggie you have.

2 cups cooked, chilled if possible, small shell pasta.

1.5 cups halved cherry tomatoes 1/2 cup thinly sliced carrots .5 cups sliced celery .5 cups shopped seeded and peeled cucumber .5 cup thinly sliced radishes .5 cup peas .5 cups onions or peppers 1 can star kist solid whit or chunk light tuna, drained 1 cup salad dressing of choice Bibb lettuce and herbs of choice

In large bowl, combine all except lettuce and herbs. Place lettuce leaves on each plate and spoon on salad.

Creamy Tuna Brocoli andswiss sauce

Easy preps.

1 can cr of broccoli soup .5 cup half and half or milk .5 cup shredded swiss cheese or cheese of choice 2 cups chopped cooked brocoli pimento star kist tuna Hot cooked pasta or rice

Combine soup milk and cheese. cook over low heat. Stir in other ingedients and heat. Pour over sauce.

Tuna pot pie

2 pie crust 1 can tuna peas carrots ( as much as you want) chopped onion 1 can cr of potatoe soup or cr of mushroom soup 1/3 cup milk .5 teaspoon poultry seasoning or tried thyme salt and pepper to taste

Line 9 inch pie pan with one crust; set aside. Reserve second crust. In medium bowl combine remaining ingredient. Pour tuna mixture into shell, top with 2nd. Crimp edges to seal. Cut slits in top. Bake 375 until golden brown...or however you are cooking for y2k.______ ________________

Stir Fry

Veg oil onion Garlic oriental veggies 1 can tuna soy sauce 1Tablespoon lemon juice 1 Tablespoon water 1 teaspoon sugar 2 cups hot cooked rice.

Stir fry oil, anion and garlic. Add veggies. Add tuna, soy sauce, and other ingredients. Serve over rice.

May use 4 cups of fresh veggies from garden and mushrooms. Anything you want.

Star kist swiss potatoe pie

1 cup milk 4 eggs beaten 4 cups hash browns 2 cups swiss sheese or cheese of choice onion chopped 1/2 cup sour cream garlic poswer 1 can tuna

milx and bake until brown _________________________

Biscuit tuna bake

2 TBS veggie oil .5 cup chopped onion .5 cup choppe celery..optional 1 can tuna 1 can cr of potato soup 3.4 cup milk black pepper garlic powder about 10 biscuits

In large skilletheat oil and saute onion. Add remaining engredients except biscuits. Transfer mixture ot casserol. Arrange biscuits around tip edge. Bake abr 400 for 10 to 15 minutes. __________________________

one skillet meal

1 pkg chicken flavored rice mix 1/2 cup chopped onion 1.5 cups peas and carrots 1 can cr ofmushroom soup pepper 1 can tuna almonds or nuts optional

Combine rice mix and onion in saucepan.Add water. Prepare rice to direction on pkg. Stir in veggies woup and pepper. Blend well. Simmer Add in tuna and nuts serve over rice or pasta _________________________

Tuna Mac

1 pkg mac and chees 1 can tuna 1 can peas .5 cups shredded cheese .5 cups milk 1 tsp italianherb seasoning 1.4 tsp garlic powder 1 TBS grated parmesan scheese.

Prepare mac and cheese dinner. Add remaining ingredients except parmesan cheese. Heat. Add parm sheese.

Keep it simple! For Y2K --- Juice of one lemon, 2 or 3 cloves of garlic [finely diced], olive oil, salt to taste. Blend in a blender or put into a masson jar and shake until you arms hurt. Best around!

try tuna with pineapple. I know it sounds wierd but try it. Makes canned tuna taste a little bit like fresh fish, well kinda sorta.

It's a bodybuilder thing - tuna is almost all protein, but mayo or pasta add too many carbs.

I have an easy salad dressing that tastes like the salad dressing I remember from my days in Germany. Simply add Kosher Dill Pickle juice to mayonaise until you like the consistency.

I don't know how tuna recipes got in here but I have a favorite..and it's simple and easy.

one egg one small can tuna dehydrated onion(optional) white corn bread mix vegetable oil

add the egg to the tuna (add dehydrated onions to taste-optional)

mix together

put small amount of corn bread mix in a bowl

coat tablespoons of the tuna mixture with the corn bread mix..try not to mix the corn bread mix into the tuna mixture..just coat the outside.(you can make the tuna go further by mixing the corn bread mix into the tuna mixture but the more you do, the more the result will taste like corn bread and less like tuna)

pan fry in vegetable oil until browned

delicious with catsup (I like hot catsup with this..if you can't find this in the store, add cayenne pepper to the catsup)

This recipe makes four or five small patties..enough for one person.
