Why is my post-shot ground so wet and

After making my shot of espresso, My ground that is in the basket is dirty and wet. I have an expensive machine around 1200 dollar, so that is not the problem (acquaviva). After emptying the basket by tampering, there will still be a lot of wet coffee in the basket.

Many barista's have a dry roast after making a shot of espresso, what comes out of the basket if tampering.

Why can't I? Please answer, many thanx

Have you tried grounding a little corser and tamping harder? I believe I read on Schomers site that wet grounds is a symptom of the grind being too fine; so as to not soak up enough water as compared to a coarser grind. HTH

increase your grind time slightly to allow more coffee to enter the brewing chamber, this needs to compensated slightly by adjusting the grind to slightly courser, once you have a dry pack, adjust the grind to get a good crema(guiness head) fine makes a slow pour and good head,too fine nothing comes out, too course, black water
