I've grown hyacinth beans as pretty ornamental vines. Until I started going through a pile of old Organic Gardening and Farming mags my son found at a yard sale, I had no idea you could eat them! The plant grows here in Durham with no care, other than water during a drought. Goodness, imagine what kind of a crop I could get if I actually fed and cared for the vines! The blooms are light purple, bean-types, pods are a deep, vibrant purple. Hull as usual, boil in a small amount of water until tender, then season with a bit of salt, pepper and oil or butter. There'll be plenty of beans to save for next year's seeds.

Taz, you should be able to find the seeds at any of them there seed displays, like at the Megalomart, or any seed catalogue. If you have problems, let me know.
