What is burst mode? Did I miss something?

Burst mode means that the DMA device will do the entire transfer (all count of them) without giving up ownership of the bus.

This is different from cycle stealing mode where the DMA device will only transfer a single word, give up the bus (to allow the CPU and other devices access) and then re-aquire the bus for the next transfer.
