Organic fertilisers for delivery through irrigation

I figured Aussies would be the best people to pose this question to.

I am re-planting a vineyard on a terraced hillside in Tuscany, Italy. All my intelligence has been gathered to date from Australia (which I visit on business, and which publishes viticultuire books in English!)

I wish to ensure the crop, and the wine production processes are organic.

Any tips in general?

How do I source/make feed which can be delivered via drip irrigation?
